Where do I get those metal rings from? And what’s the best size?

I get asked about these so often because I like to use them to make raw cheeses. You can find them at cookshops, or online (click here for my full kit recommendations).  Straight-edged cookie cutters also work really well.

The next natural question then is, “what size?”. I usually go for around about 3″ wide by 2″ tall for making cheeses (7.5cm by 5cm).
